Our High Valley Cabernet Sauvignon starts with aromas of dried cherry, black pepper and cedar. The full-bodied flavors and textured finish are enhanced by notes of cherries, herbs, and toasted oak.
Typical of High Valley fruit, the grapes from Betsy’s vineyard and Caldwell Block 12 are powerful, yet complex and the base for High Valley Cabernet. Named in memory of Clay’s mother, Betsy’s vineyard has a northwest facing slope that allows longer ripening time, resulting in an intensely structured Cabernet. Using primarily French oak and cherry wood, the barrels are chosen to lift the fruit and add nice, toasted spices to the finish.
We received 1/3 of our annual rainfall in 2021. The spring was mild and spring flowers were early. This was followed by a heatwave in May, June & July of 90-105˚F + temps. This brought on an early and quick harvest starting on August 12th and ending October 20th. The berries were small, but oh so concentrated.
